Potato pâté – EN

This typically Bourbonnais dish can be served as a starter or main course.
Accompanied by a green salad and/or cold meats, the pâté aux patates should be eaten warm.

Ingredients

  • 2 shortcrust pastries (or 500 grams of home-made pastry) – note that some people prefer it with puff pastry
  • 1 kg firm-fleshed potatoes
  • 40 cl crème fraîche (the choice of cream is decisive – a real farmhouse cream is recommended)
  • 1 egg yolk
  • salt and pepper
  • 1 onion (optional)
  • a few sprigs of parsley (optional)

Preparation

Step 1

Preheat your oven to gas mark 7 (210°).

Step 2

Peel the potatoes and cut into thin slices. Rinse in cold water and dry with a tea towel or kitchen paper.

Step 3

Peel and chop the onion and parsley. Mix together and season with salt and pepper.

Step 4 Place

Place a shortcrust pastry in the bottom of a pie dish and fill with the filling.

Step 5

Cover the potatoes with the second pastry and place the edges of the bottom pastry over the top.

Step 6

Make a 5 cm diameter hole in the centre of the pâté (“La Cheminée”).

Step 7

Brush with egg yolk.

Step 8

Place in the oven for 45 to 50 minutes.

Step 9

Once out of the oven, pour the cream through the chimney and swirl your dish so that the cream penetrates the potatoes (or cut off the lid and pour the cream into the pâté, making sure there is cream everywhere. Replace the lid and serve).
