Refinement and excellence

Aged in oak casks from the Tronçais forest or old French wine and spirit casks

The whiskies are produced using new casks from the nearby forest (fôret domaniale de Tronçais) and old casks of French spirits and wines selected by the nose so that the alchemy can take place.

The distillery’s philosophy

A unique process, a unique taste and a shared passion!

During his years of research, Olivier never wanted to make an imitation of Scotch, American or Irish whisky. He wanted to produce a different, surprising whisky, using local cereals, casks from the Tronçais region or old French spirit casks. Thanks to this obsession with quality and difference, the distillery developed a different production process and created its own signature.

In 2013, as he was getting on in years, he wanted to hand over the reins. He met David Faverot, a young enthusiast trained at the Université des alcools de Segonzac, to whom he passed on his know-how. Now it’s David’s turn to write the next chapter in the history of Monsieur Balthazar’s distillery.

I’m very happy to have met David when he finished his studies. Already involved in local development, he very quickly got hooked on ‘home-made’ ways of making whisky before following his own path. He has an excellent nose, much better than mine. And technically, I couldn’t keep up with him. He’s a chef!

I couldn’t have found a better trainer than Olivier. It was very rewarding to share my days and even my evenings with Olivier, to get information as I went along, to share unique moments of conviviality and complicity.
Even today, it’s fascinating to talk with a man who understands me thanks to a common passion: whisky. And not just any whisky: the one he created. If I had one thing to remember from what he taught me, it would be: “A tasting spirit, like the distillery’s other products, must reflect a history, a know-how, a terroir, but above all a person”.
The genes of the distillery’s whiskies, their production (from the original cereals to ageing in oak casks), confirm a signature that will inevitably be a little different from that of the distillery’s beginnings, but I accept that. That’s the value that drives me: authenticity.
