The distillery’s philosophy
A unique process, a unique taste and a shared passion!
During his years of research, Olivier never wanted to make an imitation of Scotch, American or Irish whisky. He wanted to produce a different, surprising whisky, using local cereals, casks from the Tronçais region or old French spirit casks. Thanks to this obsession with quality and difference, the distillery developed a different production process and created its own signature.
In 2013, as he was getting on in years, he wanted to hand over the reins. He met David Faverot, a young enthusiast trained at the Université des alcools de Segonzac, to whom he passed on his know-how. Now it’s David’s turn to write the next chapter in the history of Monsieur Balthazar’s distillery.
