The piquenchâgne

In the Bourbonnais region, tradition dictates that every celebration or reception
is accompanied by a “pompe”, brioche in patois.
Thus, it is certainly following a snack with friends or family that the piquenchâgne came into being.

It is a cake with pears, quinces or apples macerated in a mixture of sugar, cream and alcohol, whose fruits are pricked right in the paste as one “pricks an oak in ground”, from where its name.

Ingredients

  • 500 g flour
  • 15 g baking powder
  • 3 eggs
  • 100 g butter
  • 25 cl milk
  • 1 pinch salt
  • 2 tablespoons sugar
  • 500 g pears (or apples or quinces).

Tools:
-a salad bowl
-a baking sheet
-if you don’t want to knead by hand: food processor or mixer with hooks

Preparation

Step 1

Cool the milk and stir in the baker’s yeast.

Step 2

In a mixing bowl, make a well with the flour, pour in the milk, beaten eggs, sugar and softened butter. Add a pinch of salt.

Step 3

Mix and knead firmly for a good 1/4 hour, until the dough no longer sticks to the bowl.

Step 4

Peel and seed the fruit.

Step 5

Spread the dough to a half centimeter thickness and put the chopped fruit on top.

Step 6

Then pat the edges of the dough toward the center, and gently knead to distribute the fruit evenly.

Step 7

On a baking sheet, form a crown and let rest for 3 hours: the dough will double in size.

Step 8

Gently brush with egg and bake in a hot oven, keeping an eye on the cooking. Check if necessary with the tip of a knife.
