Refinement and excellence

Aged in oak barrels from the Forêt de Tronçais or old French spirits and wine barrels

The whiskies are produced from new barrels from the nearby forest (fôret domaniale de Tronçais) and old French spirits and wine barrels selected by the nose so that the alchemy can be done.

The distillery’s philosophy

Unique process, unique taste and shared passion!

During these years of research, Olivier never wanted to make an imitation of Scotch, American or Irish whisky. He wanted to produce a different, surprising whisky, with local cereals, casks from the Tronçais country or old French spirit casks. It is thanks to this obsession with quality and difference, that the distillery developed a different manufacturing process and thus created its own signature.

In 2013, getting older, he wished to hand over. He met David Faverot, a young enthusiast trained at the University of Alcohol in Segonzac, to whom he passed on his craftsmanship. It is now up to David to write the future lines of the history of Monsieur Balthazar’s Distillery.

I am very happy to have been able to meet David when he finished his studies. Already involved in local development, he quickly latched onto the “homegrown” ways of doing things before going his own way. He is gifted in the appreciation of aromas: he has an excellent nose, much better than mine. And technically I couldn’t keep up with him. He’s a chef!

I couldn’t find a better trainer than Olivier. It’s been very rewarding to share my days and even my evenings with Olivier, to have information as we go along, to share unique moments of conviviality and complicity.
Still today, it’s exciting to exchange with a man who understands me thanks to a common passion: whisky. And not just any whisky: the one he created. If I had one thing to remember from what he taught me, it would be: “A tasting spirit, just like the other products of the distillery, must reflect a history, a know-how, a terroir, but above all, a person”. It is this value that drives me: authenticity.
