A brilliant and renowned chef who has worked all over France, from Monaco to Metz via Paris, Saint-Malo, Courchevel and Burgundy, he was notably awarded a Michelin star in 2016 for a restaurant in Brittany.

A renowned chef

This 41-year-old chef has an impressive CV. It reveals that his time in prestigious kitchens shaped the young man right from the start of his career. He completed his military service in the Prime Minister’s kitchen at the Hôtel Matignon; he then worked as sous-chef at the Relais Bernard Loiseau in Saulieu, followed by stints at the Hélène Darroze restaurant in Paris and Le Divellec, where he served as sous-chef.

Back to basics

After five years in Brittany, Olivier Valade was won over by the Château Saint-Jean project; for him, it represented the prospect of a return to his roots and an exciting challenge.
Born in Brive-la-Gaillarde (Corrèze), he spent his entire childhood in Auvergne and the Creuse. As a teenager, he often visited Montluçon, a town he knows well.
His hopes lie in the magnificent, vast kitchens, from which he can quickly reach the Milky Way.
