The distillery’s philosophy
A unique process, a unique flavour and a shared passion!
Throughout his years of research, Olivier never set out to create an imitation of Scotch, American or Irish whisky. He wanted to produce a whisky that was different and surprising, using local grains, casks from the Tronçais region or old casks that had previously held French spirits. It was thanks to this obsession with quality and originality that the distillery developed a distinctive production process and thus created its own signature style.
In 2013, as he was getting on in years, he decided to hand over the reins. He met David Faverot, a young enthusiast trained at the Segonzac University of Spirits, to whom he passed on his expertise. It is now up to David to write the next chapters in the history of the Distillerie de Monsieur Balthazar.
